My paragraph style for body text is set to use Arial, but when I add a hyperlink this is automagically converted into Times Roman. Which character style do I need to edit?

After you do

Format -> Character Style...

At the bottom of the Window, you will see a drop down box associated with "Show". Change to "All Styles" and you should see hyperlink and be able to edit the style.
